In ancient Greece wine was considered “the nectar of the gods.” When I find a truly superb wine I often think how much that belief still rings true today.

 

One aspect of the wine community that I’m very excited about is the progress that Texas wineries have made over the past 10 years.  The Texas wine industry today is perhaps as poised for success as California was 30 years ago.  Please visit, support, and enjoy the many Texas wineries that are producing some world-class award winning wines.  Below are links to just a few of my favorites:

I often tell people that I was making wine before I was old enough to drink it, which is a true statement.  Much of my formal knowledge I gained from studies in enology and viticulture at TV Munson School of Enology and Viticulture.  The rest from years of enjoyment of fine wines and planting and growing wine grapes in our Fannin County vineyard. 

My wine philosophy is that anyone can select a great $100 bottle of wine.  The true challenge is to find a $30 bottle of wine that tastes like it cost $100.  This is what I do at the café in selecting our wines.  Each wine is tasted and selected based upon how it merits.  If it doesn’t meet our standards for value it is not on our wine list.
